I needed a challah that is easy to make and that I can eat – no grains. It turned out great and everyone loved it. It reminds me of pound cake! I bought a challah silicon baking mold so that it looks like a challah!
Ingredients:
6 eggs
2 Tbsp raw honey
1/2 cup coconut oil (melted)
3/4 cup coconut flour
1/2 tsp sea salt
1 tsp baking powder
cinnamon to sprinkle on top
Mix all ingredients together. Grease a loaf pan or a fancy challah pan (I just ordered this one: Silicon Challah Mold) with coconut oil and pour (it won’t really be pourable – it will be firm and spongy) the batter into a and bake at 350 for 40 min. This recipe makes one small loaf – it is very dense and filling so unless you are having a lot of guests it should be enough.

I don’t have a mold. I was trying to guage how much the recipe made as I was planning to use a bundt silicone pan. Sounds like it is bigger and would probably need to double the recipe then. Thanks

Just saw a recipe somewhere else for a pumpkin challah … since your Grain Free recipe is my “go to” (utterly delish), I’m wondering if you have any thoughts about adding pumpkin to the recipe?

Challah molds? Sweet! I had no idea such a thing existed! We keep the Sabbath but don’t do the challah because I’m GF and my husband eats paleo. I’d shied away from some other recipes online or trying my own because it would never look right. This will fit the bill. Thanks!

OMG, Challah bread, where have you been all my life.
My girls and I just made our first loaf ever. So easy, and delicious.
I did not have coconut flour on hand. So, I used my container full of a mix of flour. (from the bottoms of the bag of a few different kinds. Some gluten free, some coconut, some whole wheat.) Thought I had straight coconut on hand.
Can’t wait to try it again with just coconut.
My only question is, can you freeze it? Does it hold up well?
