I haven’t had a chance to post in a while – life has creeped up on me. I still do want to post and am thinking since one of my most popular posts is the ‘Day in the Life’ post on what we all eat in a day I think I will start trying to post what I and my daughter (henceforth known on these posts as ‘DD’, husband = ‘DH’) eat every day (or almost every day). I don’t always know what my husband eats for lunch so I am not going to post his food log – maybe he will jump in and do it! I wanted to do this for two reasons – it is good to keep a food log and I also want my daughter to be able to look back on this and see how well she ate and what foods she tried and liked. Yes–sometimes I have chef fatigue and we eat out (and I travel!) and I will note those meals on the blog too.
Breakfast:
me: two fried eggs in butter, 2 slices of bacon (still trying to find a duck bacon source!), sauerkraut, fermented salsa
DD: 1/4 cup vanilla goat yogurt topped w applesauce, flax seeds, cinnamon + 1 fried egg in butter, 2 slices of bacon
snacks:
me: peach
DD: strawberries
Lunch:
me: mixed greens, whole avocado, leftover sauteed zucchini/tomatoes with tumeric in butter, sauerkraut, potato salad with olive oil and apple cider vinegar, cup of carrot soup (made w/ chicken stock)
DD: leftover Tacodeli beef picadillo taco
snacks:
me: 3-4 pieces of homemade chocolate to get my coconut oil for the day
DD: cucumbers/hummus
Family Dinner:
leftover veal/lamb burgers, mashed potatoes (butter, yogurt cheese, milk – since I am starting to avoid dairy, I will polish off the last of the potato salad instead), homemade pickles, tomato/avocado salad, sauerkraut, fermented ketchup (for DH and DD – I am not a huge ketchup fan)
