Best dinner ever! Sometimes the best dinner’s are the ones involving only what you have on hand and last minute. I knew I had a few leftover meatballs in the fridge, some already washed kale ready to bake for kale chips and an acorn squash that needed to be eaten. Add a salad and voila – dinner.
Kale chips (coconut oil, turmeric, kelp granules), acorn squash (butter, cardamon, cinnamon, maple syrup), arugula, beefsteak tomatoes, purple sauerkraut, raw KEJU cheese, leftover meatballs– everyone cleaned their plates!
