We try not to eat polyunsaturated (PUFA) vegetable oils (what is PUFA?) so it makes it impossible to eat popcorn at the movie theater anymore. But we love popcorn and frankly it can be good for you – check out this recipe makeover of Popcorn with coconut oil and butter! I send this with my daughter for a snack at school pretty often.
Ingredients
Makes a large bowl full of popcorn to serve 2-3 people
- 1/2 cup non-GMO organic corn kernels (where to buy grains)
- 1/4 cup coconut oil (where to buy coconut oil) (NOTE: More recently I have been using ghee with great results!)
- 2 Tbsp melted butter
- 1/2 tsp salt (where to buy real salt)
Directions
I use a this popcorn popper – super fast and easy.
In a small butter warmer, melt your butter on low.
Heat up your popcorn popper on medium high heat.
Once it is hot, add the coconut oil or ghee, corn kernels and salt. Stir and turn per the directions until you hear lots of popping and can’t turn the crank anymore. Remove popcorn to a bowl and toss with the melted butter. Yum!

We just picked popcorn at the Harvest Festival this weekend. Non-GMO of course and still on the cob. We will pop it right on the cob and use it as Js afternoon snack. 🙂

I LOVE my air popped corn with real butter and coconut oil and sea salt but I don’t use any ALUMINUM PANS. aluminum is not healthy. Cant wait to try the flourless brownies but have to find some of the ingredients first. thanks for sharing!
