I have a lot of zucchini this week from my CSA and have been trying to decide what to make with it that I haven’t ever done before. I saw a picture of a pizza boat on Pinterest but no recipe link and thought it was a great idea! This was perfect for my zucchini but to also use up some leftover taco meat I had from the other night. So now I have a great ‘re-purposed’ leftover recipe from a taco night for you!
Ingredients
2 large zucchini, cut length-wise and seeds scooped out to make your ‘boat’
½ cup leftover cooked ground meat (veal or beef) – mine was sautéed with onions, garlic and tomatoes and some oregano and taco seasoning
A few cherry tomatoes sliced in half
6-8 basil leaves, chopped
¼ pound mozzarella, sliced thinly
Olive oil for drizzling
Salt and pepper to taste
Directions
Assemble your boats by first sprinkling salt and pepper on your zucchini boats. Then add the taco meat and layer on your tomatoes and cheese. Sprinkle with basil, a little more salt and pepper and then drizzle with olive oil. Bake at 400 degrees for 30 minutes or until cheese is just starting to brown and bubble.
