My daughter is in preschool and I pack her a lunch each day. However, what you might not know is that I also pack her snacks. I consider snack time another opportunity to get something nourishing in her body.
I often quickly make myself a kefir smoothie in the morning as my light breakfast until I have time to make something more substantial and lately my daughter has taken to sharing them with me. And from here the smoothie Popsicle was born!
I basically make my smoothie and pour any leftovers into these great little silicone Popsicle molds and then freeze them. I send one each day with her for her morning snack and she says it stays frozen quite nicely. She loves them. This is a great grab and go snack idea! But doesn’t freezing kill the probiotics? Nope! Grab and Go Snack: Smoothie Popsicle Recipe
Ingredients
- 2 cups kefir or yogurt
- 2 egg yolks
- 1 Tbsp ghee or coconut oil
- 1 banana or apple
- 1/2 cup frozen fruit (we like raspberries, blueberries, peaches or mango)
Directions
Blend this up in your high speed blender and then pour some for yourself and pour the rest into the silicone Popsicle molds. Freeze and enjoy!
