Breakfast:
DD: goat yogurt, applesauce, blueberries, flax seeds, cinnamon
me: 2 fried eggs, smoked duck bacon (yum from Countryside Family Farm), kraut, salsa, homemade kefir and applesauce (tolerating the cow dairy version well – hooray!)
Snack:
DD: watermelon
Lunch:
DD: egg salad with homemade mayo and kefir cheese (drained the kefir like I do the yogurt to make a cheese like cream cheese) on a corn tortilla, carrots and hummus for dipping, pickles
me: weird lunch – egg salad, sardines, avocado, kraut, pickled okra – yes–seriously.
Snack:
DD: raw Gouda cheese, dried cranberries and a few almonds (she tasted one the last time so thinking if I keep throwing a few in there she will keep tasting and get used to the texture)
Dinner:
Use up leftovers in the fridge challenge –
DD: fried rice with quail eggs, peas, salmon skin (nice and crispy) and some salmon
me/DH to share: leftover seared salmon, sauteed summer squash and amaranth and some of DD’s rice
dessert: vanilla and chocolate probiotic ice cream
