My mom makes this amazing kale avocado salad that uses an avocado to make the kale super soft and velvety. I am not a huge fan of raw kale…it has such a tough texture and frankly seems a bit hard to digest. But this kale salad is different. And it is surprisingly kid friendly. Huh? A kid friendly kale salad?! Isn’t that an oxymoron?
Apparently not. I made this on a whim the other night because I had some kale and had some avocado. I was really making it for my husband and me. I mean…my daughter eats real food and is a pretty good eater but vegetables aren’t touch and go. Sometimes she will pound down some roasted brussel sprouts and sometimes she could care less and will only choose to eat potatoes and meat. I never know. That’s how 6 year olds are right?!
I gave her some to try and let’s just say…she loved it! She ended up eating half the salad. I was floored. I have made it about 10 times since and she loves it every time. So I am sorry if your kid doesn’t like it but it’s worth a shot right? So here is the recipe…
Kid Friendly Kale Avocado Salad Recipe
Ingredients
- one bunch kale, washed and chopped into small strips
- 1 avocado
- 1 Tbsp apple cider vinegar
- 1 splash Ningxia Red (I buy this from Young Living here – this adds a nice sweetness and excellent antioxidants! – a substitute could be pomegranate juice)
- Juice from 1 lime
- 1 Tbsp organic avocado oil
- salt and black pepper to taste
- 1/4 cup homemade sauerkraut
- 2 tbsp dried cherries or blueberries
- 2 diced spring onions
Directions
Put the kale in a bowl and add the entire avocado removed from the skin. Drizzle the avocado oil on top. Using your hands, massage the avocado into the kale. This is a fun activity for your child to do with you! You get nice and messy.
Add in the other ingredients and continue massaging the kale for another couple of minutes. It should now be nice and soft and no longer leathery.
The salad will have a nice sweetness and acidity. It is packed with flavor! Simple and delicious! The kale really shines through.

I’ve been making a similar rubbed kale salad for years, but I’ve never heard of Ningxia Red, and hadn’t tried sauerkraut in it. These look like fun additions to a salad we already love. Thanks for the recipe.
