This homemade einkorn brownie recipe all started with wanting to do a fun afternoon activity at home. My husband is unfortunately laid up with an injury (he tore his Achilles tendon – OUCH!) and so we wanted to make him a treat! Brownies seemed like a great choice!
Why Einkorn Flour for this Brownie recipe?
Einkorn is an ancient grain and I have heard many great explanations of it from Gary Young (the Founder of Young Living who is now growing it and making flour – yay!) live and in person but here is a great blog post about it distilling all the pertinent info on what makes Einkorn the best. We avoid pretty much all grains at this point except rice and corn and I don’t even do that well with rice flour. But I do very well with Einkorn. Not all the time but in moderation I can tolerate this ancient wheat. I buy mine from Young Living here.

Homemade Einkorn Brownie Recipe
I adapted this recipe from an old friend’s family cookbook. It is so old the recipe called for ‘oleo’…whatever that is! Don’t worry I made it real food ‘friendly’!
Ingredients
- 1/2 cup butter (use pastured butter)
- 1/2 cup raw honey
- 4 Tbsp raw cacao powder
- 2 pastured eggs
- 1 tsp vanilla
- 3/4 cup Einkorn flour (I get mine here)
- 1 tsp aluminum free baking powder
- Optional – 1/4 cup nuts or semi-sweet chocolate chips
Directions
Preheat oven to 325 degrees F.
Melt butter on low heat in a sauce pan. Stir in the raw honey and then the cacao powder. Whisk in flour and baking powder until combined and then turn off the heat. Whisk in the eggs and vanilla. This can all be done in the sauce pan for easy clean up! Bake for 20-30 minutes or until a toothpick comes out clean at 325 degrees F in an 8 X 8 inch greased pan.
