My toddler is almost 3 and he prefers to eat mostly meat. Yep he is a carnivore! I wanted to make him an awesome nutrient dense bread for breakfast that would start his day off right and so this recipe for my “picky” (I kinda despise that label but hey it’s gonna get you clicking and here you are! LOL) toddler nutrient dense grain free bread was born! And I am going to share 5 different variations so you can use what you’ve got. It’s a very versatile recipe so you won’t ever get bored of it. My little guy has devoured it all the ways…it’s basically like eating cake for breakfast but without any of the bad stuff like refined sugar or gluten.
For me nutrient density comes from the essentials – fats. Fats is where it’s at for a developing toddler brain! Eggs and butter are like nature’s most perfect foods with so many awesome nutrients in them and so they are the stars of this recipe but there is so much more in all the various ways I make it. So let’s just get right to it!
Super Antioxidant Elderberry and Wolfberry Grain Free Bread Recipe
This recipe uses the strained leftovers from making my Instant Pot Elderberry and Wolfberry Super Syrup for winter immune boosting.
I just dumped them into the blender with all the other ingredients and voila – super awesome bread! It was so tasty!
Ingredients
- 6 pastured eggs (not fed soy feed!)
- 2 ounces raw honey
- leftover strained berries from making this super syrup recipe (about a cup)
- 6 Tbsp ghee or coconut oil
- 1 tsp baking powder (aluminum free)
- 1/4 tsp celtic sea salt (no iodized salt please)
- 1 Tbsp organic vanilla extract
- 1/2 cup organic coconut flour
Directions
Preheat oven to 350 degrees Fahrenheit.
Put all the ingredients into a blender (I use a Vitamix). Blend it up and then pour into a stainless steel (please do not use non stick) loaf pan lined with parchment paper.
Bake for 47 minutes or until an inserted toothpick comes out clean. Allow to cool for about 15 minutes before slicing. I store in the fridge and it lasts as long as my family doesn’t wolf it down or about a week.
So the recipe remains the same but here are the variations you can add instead of the elderberries/wolfberries…
Zucchini Grain Free Bread Recipe
Use the above ingredients and method but instead of the elderberries/wolfberries add:
- 1 medium zucchini (cut into chunks)
- 1 tsp cinnamon
Carrot Apple Grain Free Bread Recipe
Use the above ingredients and method but instead of the elderberries/wolfberries add:
- 1 chopped carrot
- 1/2 an apple
- 1 tsp ground cinnamon
- 1 tsp ground ginger
Banana Kale Grain Free Bread Recipe
Use the above ingredients and method but instead of the elderberries/wolfberries add:
- 1 banana
- 3-4 leaves organic kale
Blueberry Grain Free Bread Recipe
Use the above ingredients and method but instead of the elderberries/wolfberries add 3/4 cup frozen organic blueberries. You can blend them in with the rest of the ingredients so they are uniform throughout or you can blend up the other ingredients and then fold them in to preserve the whole blueberry in the bread.
